Crust Preparation

    Make the crust

    In a large bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in cold water until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.

    Bake the crust

    Preheat the oven to 350°F (175°C). Roll out dough on a floured surface and fit into a tart pan. Prick the bottom with a fork. Bake for 20-25 minutes until golden. Let cool.

Filling Preparation

    Prepare the filling

    In a medium saucepan, combine mixed berries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring gently until the mixture thickens and bubbles. Remove from heat.

    Assemble the tart

    Pour the berry filling into the cooled crust and spread evenly. Refrigerate until set, about 1 hour.

Whipped Cream Preparation

    Make the whipped cream

    In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Do not overwhip.
