    Brown the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then add it to the pot. Brown the beef on all sides, about 5-7 minutes.

    Add Mirepoix

    Once the beef is browned, remove it from the pot and set aside. In the same pot, add the diced carrots, celery, and onion. Sauté for about 5 minutes until they begin to soften.

    Add Garlic

    Add the minced garlic to the pot and cook for an additional minute until fragrant.

    Combine Ingredients

    Return the browned beef to the pot. Add the pearl barley, beef broth, water, bay leaves, thyme, and additional salt and pepper to taste.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 2-2.5 hours, or until the beef is tender and the barley is cooked.

    Serve

    Remove the bay leaves, shred the beef if desired, and serve the beef and grain hot, garnished with fresh herbs if desired.
