    Cook the Pasta

    In a large pot of salted boiling water, cook the elbow macaroni until al dente according to package instructions. Drain and set aside.

    Make the Cheese Sauce

    In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, whisking continuously until smooth. Gradually add the milk, whisking until the mixture thickens.

    Add Cheeses and Seasoning

    Reduce the heat to low and stir in the shredded cheddar and monterey jack cheeses until melted and smooth. Season with salt, black pepper, and smoked paprika.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce and stir until well combined.

    Fold in the shredded barbecue brisket, mixing well to combine.
