For the Andouille Sausage and Compote

    Prepare the Compote

    In a skillet over medium heat, add olive oil. Once hot, add diced onion and sauté until translucent, about 5 minutes.

    Add diced red and green bell peppers to the skillet. Continue to sauté until peppers are soft, about 7-10 minutes.

    Stir in minced garlic, smoked paprika, cayenne pepper, salt, and black pepper. Cook for an additional 2 minutes until fragrant.

    Cook the Sausage

    In a separate pan, grill or pan-fry the Andouille sausage links over medium heat until cooked through, about 8-10 minutes, turning occasionally.

    Once cooked, remove from heat and slice the sausages into bite-sized pieces.

    Serve

    Plate the sausage pieces and top with the red and green pepper compote. Serve warm with smoked tomato aioli on the side.
