    Marinate the Alligator

    In a bowl, mix the buttermilk and Tabasco sauce. Add the alligator meat and marinate for at least 1 hour in the refrigerator.

    Prepare the Creole Remoulade

    In a small bowl, combine mayonnaise, Dijon mustard, garlic, lemon juice, paprika, and chopped pickles. Mix well and set aside.

    Fry the Alligator

    Heat oil in a deep fryer or a large pan to 350°F (175°C). Remove the alligator from the marinade, allowing excess to drip off. Fry the alligator pieces in batches until golden brown, about 3-5 minutes. Drain on paper towels.

    Assemble the Po’ Boy

    Slice the grinder rolls in half. Spread the Creole remoulade on both sides of the rolls. Layer with lettuce, fried alligator, and tomato slices. Close the sandwich and serve with your choice of house side.
