Prepare Beets
Wash and peel the beets, then chop them into small pieces. Boil the chopped beets in 2 cups of water for about 30 minutes until soft. Strain, reserving the liquid and mashing the beets to extract more juice.

Create Wort
In a large pot, bring 5 gallons of water to a boil. Add the barley malt and boil for 60 minutes, stirring occasionally. After 30 minutes, add the hops.

Add Molasses and Beet Juice
After the boil, remove the pot from heat. Stir in the molasses and the strained beet juice into the wort until well dissolved.

Cool and Ferment
Cool the wort quickly to about 70°F (21°C). Transfer to a fermentation vessel and add the yeast. Seal with an airlock and allow to ferment for 1-2 weeks at a consistent temperature.

Bottling
Once fermentation is complete, prepare bottles by sanitizing them. Mix the sugar with a small amount of water to create a simple syrup and add this to the beer before bottling. Fill the bottles, cap them, and let them carbonate for about 1-2 weeks.
