Prepare the Ingredients
Chop the heirloom tomatoes, red onion, and garlic cloves. Set aside the fresh basil and cashew parmesan.

Cook the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes until softened. Add the garlic and cook for an additional 1-2 minutes.

Combine Ingredients
Add the chopped heirloom tomatoes to the skillet, along with the balsamic vinegar. Cook for 5-7 minutes, stirring occasionally, until the tomatoes are soft and the mixture is heated through.

Mix with Pasta
Add the cooked penne pasta to the skillet and toss to combine. Remove from heat and stir in the fresh basil leaves.

Plate the vegan penne and top with cashew parmesan. Serve immediately.
