Cook the Beef

In a large skillet over medium heat, add olive oil. Once hot, add the ground beef and cook until browned, about 5-7 minutes. Season with salt, pepper, chili powder, and cumin.

Sauté the Aromatics

In a separate pot, add a bit more olive oil and sauté the chopped onion until translucent, about 3-4 minutes. Add minced garlic and cook for another 1-2 minutes.

Prepare the Risotto

Add Arborio rice to the pot with onions and garlic. Stir for about 1-2 minutes until the rice is lightly toasted. Gradually add beef broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.

Combine Everything

Once the rice is creamy and al dente (about 18-20 minutes), stir in the cooked beef, corn, black beans, cheddar cheese, and chopped cilantro. Adjust seasoning with salt and pepper if necessary.

Serve

Serve hot, garnished with additional cilantro and cheese if desired.
