Prepare the Pork Chops
Season the pork chops with salt, black pepper, minced garlic, rosemary, and thyme on both sides. Allow them to marinate for at least 30 minutes.

Sear the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear them for about 4-5 minutes on each side until they are golden brown and cooked through. Remove from skillet and set aside.

Create the Tomato Caper Reduction
In the same skillet, add the heirloom tomatoes and capers. Sauté for 2-3 minutes until the tomatoes start to soften. Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Simmer for about 10 minutes until the sauce has reduced slightly.
