Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and chopped pecans. Mix well until all crumbs are moistened. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, and continue to beat until well combined. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract and sour cream until the mixture is creamy and smooth.

Combine and Bake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

Prepare the Topping
In a small saucepan over medium heat, combine the brown sugar, butter, and heavy cream. Stir until the mixture is smooth and begins to bubble. Add the chopped pecans and stir until coated. Remove from heat and let cool slightly.

Once the cheesecake has cooled, pour the pecan topping over the cheesecake, spreading it evenly. Chill in the refrigerator for at least 4 hours, or overnight, before serving.
