    Prepare the Broth

    In a saucepan, heat the chicken or vegetable broth over low heat. Keep it warm throughout the cooking process.

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent. Add the minced garlic and cook for an additional minute.

    Cook the Mushrooms

    Add the sliced domestic and shiitake mushrooms to the skillet. Sauté until they are soft and have released their moisture.

    Add Sun-Dried Tomatoes

    Stir in the sun-dried tomatoes and cook for another 2-3 minutes.

    Toast the Rice

    Add the Arborio rice to the skillet. Stir to coat the rice with the oil and cook for 2 minutes until slightly toasted.

    Deglaze with Wine

    Pour in the white wine and cook until it has mostly evaporated.

    Add Broth Gradually

    Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is almost fully absorbed before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

    Incorporate Beef and Sauce

    Stir in the diced seared beef, Dijon mustard, and grated Parmesan cheese. Mix well until everything is heated through.

    Season and Serve

    Season with salt and black pepper to taste. Garnish with fresh parsley before serving.
