Cooking Instructions
- 1
Prepare the Broth
In a saucepan, heat the chicken or vegetable broth over low heat and keep it warm.
- 2
Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onions and green peppers, and sauté until softened, about 5 minutes.
- 3
Add Sun-Dried Tomatoes and Rice
Stir in the chopped sun-dried tomatoes and Arborio rice. Cook for 2-3 minutes, stirring frequently, until the rice is lightly toasted.
- 4
Add Broth Gradually
Begin adding the warm broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process for about 20 minutes.
- 5
Incorporate Corn and Crabmeat
Once the rice is creamy and al dente, stir in the sweet corn and jumbo lump crabmeat. Cook for an additional 5 minutes to heat through.
- 6
Season and Serve
Remove from heat and stir in grated Parmesan cheese, crushed Chile de arbol peppers, and season with salt and black pepper to taste. Garnish with chopped parsley before serving.
