Preheat the oven to 400°F (200°C). Slice the potatoes in half and toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, or until golden and crispy.

In a blender, combine strawberries, fresh basil, honey, and a pinch of salt. Blend until smooth. Set aside.
