Preparation Steps

  1. 1

    Prepare the Roasted Potatoes

Preheat the oven to 400°F (200°C). Slice the potatoes in half and toss them with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, or until golden and crispy.

  2. 2

    Make the Strawberry-Basil Glaze

In a blender, combine strawberries, fresh basil, honey, and a pinch of salt. Blend until smooth. Set aside.

  3. 3

    Cook the Salmon and Shrimp

Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the salmon fillets and shrimp with salt and pepper. Place the salmon skin-side down and cook for 4-5 minutes. Flip, add the strawberry-basil glaze on top, and cook for an additional 3-4 minutes until cooked through. Add the shrimp and cook for 2-3 minutes until pink and opaque.

  4. 4

    Prepare the Cucumber Salad

Slice the cucumber thinly and toss it with olive oil, salt, and pepper. Set aside.

  5. 5

    Assemble the Dish

On a plate, place the roasted potatoes, and top with the glazed salmon and shrimp. Add cucumber salad on the side, scatter pea tendrils over the top, and crumble goat cheese.
