Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove from oven and allow to cool while preparing the filling.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese with a hand mixer until smooth. Gradually add the sugar and mix until fully combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until smooth.

Add White Chocolate
Melt the white chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth. Allow it to cool slightly, then fold it into the cheesecake mixture.

Combine and Bake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes, or until the edges are set but the center is still slightly jiggly.

Cool and Chill
Turn off the oven and crack the door open, letting the cheesecake cool in the oven for about an hour. Then refrigerate for at least 4 hours or overnight.

Prepare Strawberry Sauce
In a saucepan, combine fresh strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries break down and the sauce thickens, about 10-15 minutes. Let it cool.

Serve
Once the cheesecake is chilled, remove it from the springform pan. Drizzle the strawberry sauce over the cheesecake before serving.
