Cheesecake Preparation

    Prepare the crust

    Preheat your oven to 325°F (160°C). In a bowl, combine the graham cracker crumbs and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar, sour cream, and vanilla extract. Mix until combined. Add the eggs one at a time, mixing just until incorporated.

    Bake the cheesecake

    Pour the cheesecake filling over the prepared crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

    Cool and refrigerate

    Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.

    Prepare strawberry and white chocolate drizzle

    In a saucepan, melt 1 cup of white chocolate chips over low heat, stirring until smooth. In a separate bowl, mash 1 cup of fresh strawberries with 2 tablespoons of sugar. Drizzle the melted white chocolate and strawberry mixture over the chilled cheesecake before serving.
