Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and set aside to cool.

Make the cheesecake filling
In a large mixing bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract and mix well. Add eggs one at a time, mixing on low speed until just combined. Pour the cheesecake filling over the cooled crust.

Prepare the fruit topping
In a separate bowl, mix strawberries, rhubarb, cornstarch, and sugar for topping. Spread the fruit mixture evenly over the cheesecake filling.

Bake the cheesecake
Bake in the preheated oven for 50-60 minutes or until the center is set and only slightly jiggly. Remove from the oven and let it cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight before serving.
