Preparation Instructions
Prepare the Strawberries
Wash the fresh strawberries and remove the stems. Slice them and place them in a bowl.
Make Strawberry Mixture
Add the granulated sugar to the sliced strawberries and toss gently. Let it sit for about 15 minutes to allow the strawberries to release their juices.
Blend the Ingredients
In a blender, combine the macerated strawberries (with juices), whole milk, heavy cream, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth.
Chill the Mixture
Pour the mixture into a bowl and cover it. Refrigerate for at least 2 hours, or until well chilled.
Churn the Gelato
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions, usually around 20-25 minutes.
Freeze the Gelato
Transfer the churned gelato into an airtight container and freeze for at least 4 hours or until firm.
Serve
