Prepare the crust
Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust.

Make the cheesecake filling
In a large mixing bowl, beat the softened cream cheese until smooth. Add in sour cream, vanilla extract, and granulated sugar. Mix until well combined. Add eggs one at a time, mixing well after each addition until smooth.

Add strawberries
Gently fold in the sliced strawberries into the cheesecake mixture.

Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

Remove the cheesecake from the oven and let it cool at room temperature for about 30 minutes. Then refrigerate for at least 4 hours or overnight.
