Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes or until lightly golden. Remove from oven and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat softened cream cheese with sugar until smooth. Add sour cream, vanilla extract, and pureed strawberries, mixing until well combined. Add eggs one at a time, mixing well after each addition until smooth and creamy.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool inside for an hour.

Prepare the Chocolate Ganache
In a small saucepan, heat heavy cream over medium heat until just simmering. Remove from heat and add semi-sweet chocolate chips. Stir until the chocolate is completely melted and the ganache is smooth.

Once the cheesecake is cooled, pour the chocolate ganache over the top and spread evenly. Refrigerate for at least 4 hours or overnight before serving.
