Prepare the crust
Preheat the oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs with melted butter and press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.

Make the filling
In a large mixing bowl, beat the cream cheese and sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition.

Add strawberries
Fold in the fresh strawberries gently into the cheesecake mixture.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for an hour.

Chill
Refrigerate the cheesecake for at least 4 hours or overnight before serving.

Prepare the sauce
In a small saucepan, combine the heavy cream and sugar. Heat over medium heat until the sugar dissolves and the mixture is simmering.

Melt the chocolate
Remove from heat and stir in the chopped white chocolate until melted and smooth.

Combine with raspberry puree
Stir in the raspberry puree until well combined. Allow to cool slightly before serving over the cheesecake.
