Cheesecake Filling

Method

Preparation

  1. 1

    Prepare the Crust

Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

  2. 2

    Make the Cheesecake Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, mixing until fully combined. Add the sour cream and vanilla extract, mixing until smooth. Add the eggs one at a time, mixing just until incorporated after each addition.

  3. 3

    Add Flavors

Fold in the pureed strawberries and mashed banana until fully incorporated. Next, gradually mix in the melted white chocolate, followed by the melted dark chocolate. Stir until the mixture is evenly blended.

  4. 4

    Bake the Cheesecake

Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake for 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

  5. 5

    Chill and Serve

Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight. Before serving, garnish with fresh strawberries and banana slices, if desired.
