Cheesecake Preparation

    Prepare the crust

    Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are fully coated. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes, then remove from the oven and allow to cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth. Add the vanilla extract and sour cream; mix until well combined. Add the eggs one at a time, mixing on low speed until just incorporated. Do not overmix.

    Combine and bake

    Pour the cheesecake filling over the cooled crust. Arrange the sliced strawberries and banana on top of the filling. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.

    Cool and serve

    Turn off the oven and crack the door, letting the cheesecake cool slowly for 1 hour. Afterward, refrigerate for at least 4 hours or overnight. Before serving, dust with powdered sugar and garnish with additional strawberry slices if desired.
