Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 8-10 minutes, then remove from the oven and let it cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the sugar and mix until incorporated. Add the vanilla extract and sour cream, mixing until smooth. Add the eggs one at a time, mixing on low speed until just combined.

Add fresh fruits
Chop the strawberries and banana. Gently fold the chopped strawberries and banana into the cheesecake filling.

Bake the cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly wobbly.

Cool and refrigerate
Turn off the oven and leave the cheesecake inside for 1 hour. Then remove it from the oven, let it cool to room temperature, and refrigerate for at least 4 hours or overnight.

Prepare chocolate sauces
Melt dark and white chocolate separately in microwave-safe bowls. Use short bursts of heat and stir until smooth.

Serve
Slice the chilled cheesecake and serve with drizzles of both white and dark chocolate sauce over the top.
