Cheesecake Filling

    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden, then let cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat together the cream cheese and sugar until smooth. Add the sour cream, vanilla extract, and beat until well combined. Add eggs one at a time, mixing well after each addition. Fold in the mashed bananas and diced strawberries gently.

    Combine and Bake

    Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula. Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Chill and Serve

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight. Before serving, top with additional sliced strawberries and bananas as desired.
