Chimichurri

    Prepare the Chimichurri

    In a mixing bowl, combine fresh parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Mix well and set aside.

    Make the Potato and Caramelized Onion Hash

    Heat olive oil in a skillet over medium heat. Add diced potatoes, salt, and pepper. Cook until potatoes are tender and golden brown, about 10-15 minutes. In the same skillet, add sliced onions and cook until caramelized, about 5-7 minutes. Combine with potatoes and set aside.

    Cook the Steak

    Season the skirt steak with salt and pepper. Heat olive oil in a skillet over high heat. Add the steak and cook for about 3-4 minutes on each side for medium-rare. Remove from the skillet and let rest.

    Cook the Eggs

    In the same skillet, reduce heat to medium. Add butter and let it melt. Crack the eggs into the skillet and cook until the whites are set but yolks are still runny, about 2-3 minutes.

Serve

    Plate the Dish

    Slice the steak against the grain. On a plate, serve the potato and caramelized onion hash, top with the sliced steak, and place the over-easy eggs on the side. Drizzle chimichurri over the steak and enjoy!
