Cooking Instructions

  1. 1

    Prepare the Vegetables

In a large pot, heat olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté until the vegetables are softened, about 5-7 minutes.

  2. 2

    Add Garlic

Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.

  3. 3

    Combine Ingredients

Stir in the split peas, vegetable broth, bay leaves, thyme, salt, and black pepper. Bring the mixture to a boil.

  4. 4

    Simmer

Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 45-60 minutes, or until the split peas are tender.

  5. 5

    Blend (Optional)

For a creamier texture, you can use an immersion blender to puree the soup to your desired consistency. This step is optional.

  6. 6

    Serve

Remove bay leaves before serving. Ladle the soup into bowls and enjoy!
