Prepare the Crema
In a blender, blend together roasted red peppers, cilantro, and a splash of buttermilk until smooth. Adjust seasoning with salt and pepper.

Batter the Oysters
Set up a breading station with seasoned flour, buttermilk, and a mix of flour and cornmeal. Dip each oyster first in flour, then in buttermilk, and finally coat with the flour-cornmeal mixture.

Fry the Oysters
Heat vegetable oil in a deep skillet over medium-high heat. Fry the breaded oysters for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

Assemble the Dish
On a plate, layer mesclun lettuces, top with the fried oysters, add the black bean & corn salsa, and garnish with grape tomatoes, tortilla strips, and drizzle with the roasted red pepper crema.

Drizzle the orange-chipotle vinaigrette over the assembled salad and serve immediately.
