Prepare the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine chocolate cookie crumbs and melted butter. Mix until crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Add the sour cream, granulated sugar, and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill the Cheesecake
After the cheesecake has cooled, refrigerate it for at least 4 hours or overnight before serving.

Prepare Balsamic Strawberries
While the cheesecake is chilling, prepare the balsamic strawberries. In a bowl, combine sliced strawberries with balsamic vinegar and a tablespoon of sugar. Let sit for at least 30 minutes to macerate.

Serve
Once the cheesecake is chilled, remove it from the springform pan and slice it. Serve with balsamic strawberries on top.
