Cheesecake Filling

Prepare the crust
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Bake the crust
Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes until slightly golden. Remove from the oven and let it cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Add granulated sugar, vanilla extract, and sour cream, mixing until well combined. Add eggs one at a time, mixing after each addition until just combined.

Add chocolate and marshmallows
Fold in the mini chocolate chips and mini marshmallows into the cheesecake mixture.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool inside for an hour.

Chill the cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.

Prepare the topping
Before serving, top the cheesecake with additional mini marshmallows and chocolate. Use a kitchen torch to toast the marshmallows lightly for a s'mores effect.
