Method

Preparation

  1. 1

    Make the Crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

  2. 2

    Prepare the Cheesecake Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, sour cream, and vanilla extract. Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next.

  3. 3

    Combine and Bake

Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for 45-50 minutes or until the filling is set and the edges are slightly golden. Allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.

Finishing Touches

  1. 4

    Add the Topping

Once the cheesecake is chilled, preheat the broiler. Sprinkle mini marshmallows and chocolate chips over the top of the cheesecake, followed by graham cracker crumbs. Broil for 1-2 minutes until the marshmallows are toasted and golden brown. Keep an eye on them to prevent burning.

  2. 5

    Serve

Allow the cheesecake to cool slightly before slicing. Serve chilled or at room temperature, and enjoy your delicious s'mores cheesecake!
