Preparation Steps

  1. 1

    Prepare the Lobster

In a pot of boiling salted water, cook the lobster tails for about 8-10 minutes until they are opaque. Remove from water and let cool. Once cooled, remove the meat from the shells and chop into small pieces.

  2. 2

    Make the Hollandaise Base

In a heatproof bowl, whisk together the egg yolks, lemon juice, Dijon mustard, salt, and black pepper.

  3. 3

    Melt the Butter

In a saucepan, melt the butter over low heat until it is completely liquid but not boiling.

  4. 4

    Combine Ingredients

Slowly drizzle the melted butter into the egg yolk mixture while continuously whisking until the sauce thickens and is smooth.

  5. 5

    Add Lobster and Seasoning

Fold in the chopped lobster meat and cayenne pepper into the hollandaise. Adjust seasoning to taste. If needed, add more lemon juice, salt, or pepper.

  6. 6

    Garnish

Serve the Lobster Hollandaise warm, garnished with fresh chives.
