Prepare the Lobster
In a pot of boiling salted water, cook the lobster tails for about 8-10 minutes until they are opaque. Remove from water and let cool. Once cooled, remove the meat from the shells and chop into small pieces.

In a heatproof bowl, whisk together the egg yolks, lemon juice, Dijon mustard, salt, and black pepper.

Add Lobster and Seasoning
Fold in the chopped lobster meat and cayenne pepper into the hollandaise. Adjust seasoning to taste. If needed, add more lemon juice, salt, or pepper.
