Prepare the Base
In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion, red bell pepper, and celery. Sauté until the vegetables are soft, about 5 minutes.

Add the minced garlic, paprika, cayenne pepper, salt, and black pepper to the skillet. Cook for another minute until fragrant.

Cook the Rice
Stir in the Arborio rice and cook for 2-3 minutes, allowing the rice to absorb the flavors.

Gradually add the chicken broth, one cup at a time, stirring frequently. Allow the rice to absorb the broth before adding the next cup. This process should take about 20 minutes.

Add Proteins
Once the rice is creamy and al dente, stir in the andouille sausage, shrimp, and crawfish tails. Cook for an additional 5-7 minutes until the shrimp are pink and cooked through.
