Cooking Instructions
- 1
- 2
Add Tomato Paste and Wine
Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and bring to a simmer, scraping up any browned bits from the bottom of the pot.
- 3
Add Stock and Shrimp
Add the fish stock, bay leaves, salt, black pepper, and cayenne pepper. Bring to a boil, then reduce to a simmer. Add the shrimp and cook until they are pink and cooked through, about 3-5 minutes.
- 4
Blend the Bisque
Remove the bay leaves and use an immersion blender to purée the soup until smooth. Alternatively, you can transfer it to a blender in batches.
- 5
Add Cream and Serve
Stir in the heavy cream and heat through without boiling. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
