Prepare the Broth
In a saucepan, heat the chicken broth over low heat and keep it warm throughout the cooking process.

Sauté Vegetables and Sausage
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and sauté until the onion is translucent. Then add the sliced andouille sausage, green bell pepper, and red bell pepper. Cook for about 5 minutes until the peppers are tender.

Add Broth Gradually
Begin adding the warm chicken broth, one ladle at a time, stirring continuously. Allow the rice to absorb the broth before adding more. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.

Incorporate Crawfish and Tomatoes
When the rice is almost done, stir in the crawfish tails and halved grape tomatoes. Cook for an additional 5 minutes until heated through.

Finish and Serve
Remove the risotto from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste. Garnish with chopped parsley before serving.
