    Prepare the Marinated Cucumbers

    Thinly slice the cucumber and marinate it in a mix of salt, citrus juice, and a splash of olive oil for at least 30 minutes.

    Cook the Bacon

    In a skillet over medium heat, cook the housemade bacon until crispy. Remove and set aside, leaving the drippings in the pan.

    Sauté the Shallots and Shrimp

    In the same pan, add chopped shallots and sauté until translucent. Add the shrimp and cook until they turn pink. Season with salt and pepper.

    Prepare the Sherry Cream Sauce

    Add sherry wine and heavy cream to the pan, stirring well. Let it simmer until slightly thickened. Adjust seasoning with salt and pepper.

    Cook the Tagliatelle

    In a separate pot, cook the fresh tagliatelle according to package instructions. Drain and toss with olive oil.

    Sear the Halibut

    In another skillet, heat olive oil over medium-high heat. Season the halibut fillets with salt and pepper. Sear the fillets for 3-4 minutes on each side, until golden brown and cooked through.

    Assemble the Dish

    On each plate, place a portion of tagliatelle, top with seared halibut, shrimp, and shallots. Drizzle with sherry cream sauce and garnish with marinated cucumbers and crispy bacon.
