    Prepare the Sausage

    In a large pot, heat olive oil over medium heat. Add the Andouille sausage and cook until browned.

    Sauté Vegetables

    Add the diced onion, green bell pepper, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Spices

    Stir in the minced garlic, bay leaves, dried thyme, cayenne pepper, salt, and black pepper. Cook for another 2 minutes until fragrant.

    Combine Tomatoes and Broth

    Add the canned diced tomatoes and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer.

    Add Seafood

    After simmering for 20 minutes, add the shrimp and crab meat to the pot. Cook for an additional 5-7 minutes until the shrimp are pink and the crab meat is heated through.

    Finish and Serve

    Remove the bay leaves. Stir in the chopped green onions and parsley. Serve hot over rice or with crusty bread.
