Prepare the Ingredients
Rinse the salmon fillets and pat them dry. Dice the onion and green bell pepper, and chop the sun-dried tomatoes and parsley. If using frozen corn, thaw it.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and green bell peppers. Sauté for about 5 minutes until they are softened. Add the minced garlic and sun-dried tomatoes, cooking for an additional 2 minutes.

Add Corn and Shrimp
Stir in the corn kernels and shrimp. Season with salt and black pepper. Cook for 3-4 minutes until the shrimp turn pink and are cooked through.

Cook the Salmon
Push the vegetable mixture to the side of the skillet and add the remaining tablespoon of olive oil. Place the salmon fillets in the skillet and cook for about 4-5 minutes on each side, or until the salmon is cooked to your liking.
