Cooking Instructions
- 1
Prepare the Salmon
Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and sprinkle with salt and black pepper. Roast in the oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- 2
Cook the Pasta
While the salmon is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- 3
Make the Cream Sauce
In a large skillet over medium heat, add a bit of olive oil and sauté the red onion until translucent. Stir in the artichoke hearts and capers, cooking for another 2-3 minutes. Pour in the heavy cream and let it simmer for about 5 minutes. Add the chopped dill and mix well.
- 4
Combine Everything
Add the cooked pasta to the skillet with the cream sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Flake the roasted salmon on top and gently fold into the pasta.
- 5
Serve
Plate the pasta and salmon mixture, garnishing with additional dill if desired. Enjoy your roasted salmon and dill pasta!
