Prepare the Filling
In a medium bowl, combine the roasted red peppers, cream cheese, garlic, salt, and black pepper. Mix until well blended.

Cook the Spinach
In a large skillet, heat olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

Combine Mixtures
Once the spinach has cooled, fold it into the roasted red pepper mixture. Add half of the grated Parmesan cheese and mix well.

Bake the Florentine
Preheat your oven to 375°F (190°C). Transfer the mixture to a baking dish and top with the remaining Parmesan cheese. Bake for 20-25 minutes or until the top is golden and bubbly.

Remove from the oven and let cool for a few minutes. Garnish with chopped fresh basil if desired and serve warm.
