    Prepare the Broth

    In a saucepan, heat the chicken or vegetable broth over medium heat. Keep it warm on the stove.

    Sauté Aromatics

    In a large skillet, heat olive oil over medium heat. Add minced garlic and shallots, sauté until translucent.

    Cook Mushrooms

    Add the sliced mushrooms to the skillet and cook until they are browned, about 5 minutes.

    Toast the Rice

    Stir in the Arborio rice and toast for 2-3 minutes until it becomes slightly translucent.

    Deglaze with Sherry

    Pour in the sherry wine and let it simmer until it is mostly absorbed by the rice.

    Add Broth Gradually

    Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next ladle.

    Incorporate Crawfish and Peas

    After about 15 minutes, stir in the crawfish and green peas. Continue adding broth and stirring until the rice is al dente, about 20 minutes total.

    Finish with Parmesan

    Remove from heat and stir in grated Parmesan cheese. Season with salt and pepper to taste.

    Cook Scallops

    In a separate skillet, heat a little olive oil over high heat. Season scallops with salt and sear for 2-3 minutes on each side until golden and cooked through.
