Prepare the Gremolata
In a bowl, combine the chopped focaccia, parsley, and lemon zest. Mix well and set aside.

Sauté Garlic and Tomatoes
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the heirloom cherry tomatoes and cook until they start to burst, about 5 minutes.

Cook the Fish
Push the tomatoes to the side of the skillet and add the redfish fillets. Season with salt and black pepper. Cook for about 4-5 minutes on each side, until the fish is cooked through and flakes easily with a fork.

Add Wine and Beans
Pour the white wine into the skillet and add the white beans. Stir gently to combine and let it simmer for 3-4 minutes until heated through.

Serve
Plate the redfish and spoon the tomato and bean mixture over the top. Garnish with the focaccia gremolata. Enjoy!
