Cheesecake Preparation

Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.

Make the cheesecake filling
In a large bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add the vanilla extract and mix well. Add the eggs one at a time, mixing well after each addition. Finally, fold in the sour cream until fully combined.

Add raspberries and chocolate
Gently fold in the raspberries, dark chocolate chips, and white chocolate chips into the cheesecake mixture until evenly distributed.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool and chill
Once baked, turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour to cool slowly. Then, refrigerate for at least 4 hours or overnight before serving.

Serve
Remove the cheesecake from the springform pan and slice. Serve chilled, optionally garnished with fresh raspberries and additional chocolate drizzle.
