Prepare the Pork
Rub the pork shoulder with olive oil, salt, and black pepper. Place in a slow cooker.

Cook the Pork
Cover and cook on low for 8 hours or until the pork is tender and easily shredded with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with BBQ sauce.

Prepare the Chili Mayonnaise
In a bowl, mix mayonnaise with chili powder until well combined.

Assemble the Sandwich
Toast the hamburger buns if desired. Place a generous amount of pulled pork on the bottom half of the bun, top with coleslaw, pickled onions, and a drizzle of chili mayonnaise. Close the sandwich with the top half of the bun.

Serve the pulled pork sandwiches with your choice of side.
