Cooking Instructions

  1. 1

    Prepare the Pork

Season the pork tenderloin with salt, black pepper, and fresh thyme. Heat olive oil in a large skillet over medium-high heat, and sear the pork on all sides until browned, about 4-5 minutes.

  2. 2

    Cook the Kielbasa and Onions

Add the sliced kielbasa and vidalia onion to the skillet, and continue to cook for an additional 5 minutes until the onions are translucent.

  3. 3

    Add Peaches and Garlic

Stir in the sliced Pearson peaches and minced garlic, cooking for another 3-4 minutes until the peaches soften.

  4. 4

    Deglaze with Bourbon

Pour in the bourbon to deglaze the skillet, scraping up any browned bits from the bottom. Let it simmer for about 2 minutes.

  5. 5

    Finish Cooking the Pork

Return the pork tenderloin to the skillet, cover, and reduce heat to low. Cook for an additional 15-20 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

  6. 6

    Prepare the Pecans

In a separate pan, toast the chopped pecans over medium heat until fragrant, about 3-4 minutes.

  7. 7

    Serve

Slice the pork tenderloin and serve with the kielbasa, peaches, and bourbon jus drizzled over the top. Garnish with toasted pecans.
