Gelato Preparation

Prepare the Pistachios
In a food processor, blend the shelled pistachios until they form a coarse paste. Set aside.

Heat the Milk and Cream
In a saucepan over medium heat, combine the milk, heavy cream, and granulated sugar. Stir until the sugar dissolves and the mixture is hot but not boiling.

Cook the Mixture
Return the mixture to the saucepan and cook over medium-low heat, stirring continuously until it thickens enough to coat the back of a spoon.

Combine with Pistachios
Remove the saucepan from heat and stir in the pistachio paste, vanilla extract, and a pinch of salt. Mix well.

Chill the Mixture
Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for at least 4 hours or until completely chilled.

Churn the Gelato
Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
