    Begin by chopping the pancetta, portabella mushrooms, and garlic. Cut the beef shoulder tenderloin into bite-sized pieces and season with salt and black pepper.

    In a large skillet, heat olive oil over medium heat. Add the chopped pancetta and cook until crispy, about 5-7 minutes.

    Sauté the Vegetables

    Add the chopped garlic and portabella mushrooms to the skillet with the pancetta. Sauté for another 5 minutes until the mushrooms are tender.

    Add the beef shoulder pieces to the skillet, cooking until browned on all sides, about 8-10 minutes.
