Prepare the Polenta
In a pot, bring 4 cups of water and 1 tsp salt to a boil. Gradually whisk in the polenta. Reduce heat and cook, stirring frequently, until thickened (about 15 minutes). Pour into a greased baking dish and let cool. Once set, cut into strips.

Make the Vinaigrette
Whisk together champagne vinegar, olive oil, Dijon mustard, honey, salt, and pepper in a bowl.

Assemble the Salad
In a bowl, combine pea tendrils, strawberries, crispy prosciutto, and pickled onions. Drizzle with champagne vinaigrette.
