Peanut Butter-Chocolate Pie Ingredients
Method
Pie Preparation Directions
- 1
Make the Pecan Crust
Preheat the oven to 350°F (175°C). In a food processor, blend the pecan nuts until finely chopped. In a bowl, mix the chopped pecans with melted butter, graham cracker crumbs, and powdered sugar until well combined. Press the mixture into the bottom of a pie dish to form the crust. Bake for 10-12 minutes or until golden. Allow to cool.
- 2
Prepare the Peanut Butter Mousse
In a mixing bowl, beat the cream cheese until smooth. Add peanut butter, vanilla extract, and a pinch of salt, mixing until well blended. In a separate bowl, whip heavy cream until soft peaks form. Gently fold the whipped cream into the peanut butter mixture until fully combined. Pour the mousse over the cooled pecan crust and smooth the top. Refrigerate for at least 2 hours to set.
- 3
Make the Chocolate Ganache
In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add the semi-sweet chocolate chips, letting it sit for about 5 minutes. Stir until the chocolate is completely melted and the ganache is smooth. Let it cool slightly before pouring over the set peanut butter mousse.
- 4
Assemble the Pie
Once the ganache is cool but still pourable, carefully pour it over the peanut butter mousse layer. Use a spatula to evenly spread it out. Refrigerate the pie for an additional hour to allow the ganache to set. Once set, slice and serve.
