Prepare the Fish
Season the redfish fillets with salt and black pepper.

Assemble the Bruschetta
Top each baguette slice with the tomato and bacon mixture.

Mash the Potatoes
Drain the potatoes and return to the pot. Add roasted garlic, butter, heavy cream, salt, and black pepper. Mash until smooth.

Heat the Oil
In a small pan, heat the oil for frying over medium heat.

Fry the basil leaves for a few seconds until crispy. Remove and drain on paper towels.
Parmesan Crisp

Preheat the oven to 400°F (200°C). On a baking sheet lined with parchment paper, place small mounds of grated Parmesan cheese.
