Method

Pan-Seared Redfish

    Prepare the Fish

    Season the redfish fillets with salt and black pepper.

    Sear the Fish

    Heat olive oil in a skillet over medium-high heat. Add the fillets and cook for about 4-5 minutes on each side until golden brown and cooked through.

    Serve with lemon wedges on the side.

Heirloom Tomato and Bacon Bruschetta

    Prepare the Topping

    In a bowl, combine the chopped heirloom tomatoes, bacon, fresh basil, balsamic vinegar, olive oil, salt, and black pepper. Mix well.

    Toast the Baguette

    Lightly toast the baguette slices either in the oven or on a grill.

    Assemble the Bruschetta

    Top each baguette slice with the tomato and bacon mixture.

Grilled Asparagus

    Toss asparagus with olive oil, salt, and black pepper.

Roasted Garlic Mashed Potatoes
