Prepare the Rack of Lamb
Preheat your oven to 400°F (200°C). Season the rack of lamb with salt and black pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the lamb for 2-3 minutes on each side until browned.

Transfer the skillet to the preheated oven and roast for about 15-20 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C). Remove from oven and let rest for 5 minutes.

Cook the Broccolini
While the lamb is roasting, steam or blanch the broccolini for 3-4 minutes until tender but still vibrant. Set aside.

Make the Truffled Polenta
In a pot, bring 4 cups of water to a boil. Gradually whisk in the polenta and cook until thickened, about 5-7 minutes. Stir in butter, grated Parmesan, and truffle oil. Mix well and season to taste.

Prepare the Blueberry Gastrique
In a small saucepan, combine blueberries, sugar, and red wine vinegar. Cook over medium heat until the blueberries break down and the mixture thickens, about 10 minutes. Strain if desired.

Slice the rack of lamb into individual chops. On a plate, serve the truffled polenta, topped with broccolini, and arrange the lamb chops alongside. Drizzle with blueberry gastrique and enjoy!
